AUTUMN RECIPE: MELTING PUMPKIN, FETA AND SOFT-BOILED EGGS

The star of this recipe, pumpkin is a veritable source of vitamins, fiber, and antioxidants. Paired with feta cheese, rich in calcium and protein, and soft-boiled eggs with a soft center, this dish combines pleasure and balance. Enjoy without moderation!
Ingredients (for 2 people)
- 1/2 pumpkin
- 1 tbsp of a mixture of pumpkin, chia, flax and white sesame seeds
- 1 red onion
- 1 tbsp honey (or maple syrup)
- 1/2 feta
- 2 soft-boiled eggs
- Olive oil
- Salt, pepper
The Preparation
- Remove the seeds from the pumpkin and cut it into slices.
- Slice the onion.
- In a dish, drizzle with olive oil, add the onion, then the pumpkin slices. Season with salt and pepper and bake for 30 minutes at 180°C.
- 5 minutes before the end of cooking the pumpkin, immerse the eggs in a pan of boiling salted water for 6 minutes.
- On a plate, arrange the pumpkin, onions, and soft-boiled eggs on top. Crumble the feta cheese, drizzle with honey or maple syrup, then sprinkle with the seed mixture.
