The Ingredients

  • 2 eggs
  • 60 g of coconut sugar
  • 50 g of almond powder
  • 120 g of flour
  • 1 tsp dry yeast
  • 1 tsp baking soda
  • 45 g of coconut oil
  • 1 tsp vanilla extract
  • 15 cl of coconut milk
  • 50g chocolate chips
  • 2 very ripe bananas
  • A mixture of seeds (chia, sesame, flax)

The Preparation

  1. Preheat the oven to 170°C.
  2. Whisk the eggs and coconut sugar until frothy.
  3. Add the almond powder, baking powder and bicarbonate, then mix well.
  4. Add the melted coconut oil, vanilla, and coconut milk. Mix again until smooth.
  5. Mash the bananas and add them to the batter.
  6. Add the chocolate chips and a third of the seed mixture, then mix again.
  7. Pour the mixture into a cake tin (either buttered or lined with baking paper). Sprinkle the top with the remaining seeds.
  8. Bake for 45 to 50 minutes in a fan oven.
  9. Check the baking by inserting the tip of a knife into the center of the cake. It should come out dry.
