SWEET PLEASURE: BANANA BREAD

The Ingredients
- 2 eggs
- 60 g of coconut sugar
- 50 g of almond powder
- 120 g of flour
- 1 tsp dry yeast
- 1 tsp baking soda
- 45 g of coconut oil
- 1 tsp vanilla extract
- 15 cl of coconut milk
- 50g chocolate chips
- 2 very ripe bananas
- A mixture of seeds (chia, sesame, flax)
The Preparation
- Preheat the oven to 170°C.
- Whisk the eggs and coconut sugar until frothy.
- Add the almond powder, baking powder and bicarbonate, then mix well.
- Add the melted coconut oil, vanilla, and coconut milk. Mix again until smooth.
- Mash the bananas and add them to the batter.
- Add the chocolate chips and a third of the seed mixture, then mix again.
- Pour the mixture into a cake tin (either buttered or lined with baking paper). Sprinkle the top with the remaining seeds.
- Bake for 45 to 50 minutes in a fan oven.
- Check the baking by inserting the tip of a knife into the center of the cake. It should come out dry.
